- 1 large egg

- 1 tablespoon water

1. Preheat your oven to 410°F (210°C) and line a baking sheet with parchment paper.

2. In a mixing bowl, combine the thawed and squeezed dry spinach, cottage cheese, feta cheese, egg yolk, green onion, salt, pepper, and minced garlic. Mix well to combine.

3. On a lightly floured surface, roll out the puff pastry sheet into a large rectangle. Cut the pastry into 16 rectangles. Working one rectangle at a time, place 1 tablespoon of the filling in the bottom third and fold up, forming a triangle. Crimp the ends using the tines of a fork, and place seam-side down on the prepared baking sheet.
