Spinach and Feta Borekas
Ingredients
- 1 cup frozen chopped spinach, thawed, squeezed dry
- 1/4 cup cottage cheese or yogurt
- 1/4 cup crumbled feta cheese
- 1 egg yolk
- 1 green onion, finely chopped
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried minced garlic
- 1 sheet frozen puff pastry, thawed
- 1 large egg
- 1 tablespoon water
Instructions
1. Preheat your oven to 410°F (210°C) and line a baking sheet with parchment paper.
2. In a mixing bowl, combine the thawed and squeezed dry spinach, cottage cheese, feta cheese, egg yolk, green onion, salt, pepper, and minced garlic. Mix well to combine.
3. On a lightly floured surface, roll out the puff pastry sheet into a large rectangle. Cut the pastry into 16 rectangles. Working one rectangle at a time, place 1 tablespoon of the filling in the bottom third and fold up, forming a triangle. Crimp the ends using the tines of a fork, and place seam-side down on the prepared baking sheet.
4. In a small bowl, whisk together the large egg and water to create an egg wash. Brush the tops of the borekas with the egg wash.
5. Bake in the preheated oven for 20 to 25 minutes, or until the borekas are golden brown and cooked through.
